A couple days ago, a fun visitor left our company after three months on Sila. Jack Fields, known to me as Big Jack, was very fun to have on board. I did not regret having him sail with us through the beautiful Chilean Fjords. He, in my opinion, was the ideal person to have during this experience. Big Jack left us many legacies. For instance, the saying "so good" means the food is great. He said it... every single meal. Mama said she dreaded the time when he did not say this, meaning the food was not "so good." Thankfully, that time never came and I agree with Big Jack, the food was delicious these past three months. For example, Big Jack's bread was "so good," to use his words. Often times, I would wake up to the smell of hot bread, wafting from the galley. The bread was as good as the bread we ate in France, and that is saying something. He made slightly different bread each time using slightly different ingredients. Big Jack taught me how to make the best variation of his bread, so I continue the bread making. Now, after he's gone, we have Jack's bread.
Here is a recipe for Jack's bread:
Ingredients:
1 T yeast in 1 cup of 90 degree water
4 cups white flour in separate bowl
1 1/2 cups semolina flour
1/2 cup whole wheat flour
2 T sugar
1 1/2 tsp salt
Steps:
Put the yeast in the cup of 90 degree water
mix all the dry ingredients in a bowl
pour the 1 cup of yeast water on dry ingredients
mix in the water
mix or knead the dough until right consistency
add water or white flour if needed and knead until same consistency
leave dough overnight
in the morning, pre heat oven and knead dough well
sprinkle flour over dough if it is too wet
tear dough into two even pieces
make two loaves
put deep slashes in the loaves
let loaves sit for 10-20 min
cook loaves for 25-30 min
spin loaves and cook for 15-25 min until they look done
(most importantly) EAT THEM with butter or with olive oil and balsamic vinegar if your butter supply is low.
