Here I go again, writing about food! My experience of Norwegian cuisine has been fabulous. With Daddy's help in getting the local foods, we have managed to enjoy some delicious, classic, Norwegian meals. My favorite is what we call Norwegian lunch or breakfast. Although it is typically eaten in the morning and evening by Norwegians, we eat it for breakfast and lunch. Our definition of Norwegian lunch or breakfast is a combination of toppings for Wasa cracker (flat brød) or bread (brød). We have pickled herring (sursild), brown cheese (Brun Øst), jam (syltetoy), white cheese (hvitost), caviar (kaviar), baconost, RekeOst, and butter if we are using bread.
The pickled herring, plain on a cracker or with white cheese, is one of my favorites. It is better than pickles, as the flavor of the fish is not overshadowed by the vinegar.
Brown cheese has a funny flavor. It is the whey of cow's milk cooked down until it becomes slightly sweet. It is similar to dulce de leche, but it is not nearly as sweet. Technically it is not cheese as there is no bacteria in it. It was originally made from goat's milk (called Gietost) but apparently the stronger flavor of goat's milk is less popular. I like it on an apple or just plain. The white cheese is quite bland but improves other toppings to no end.
The kaviar is a paste made from fish and roe. It comes in a toothpaste tube that is ideal for smearing on crackers. It is salty with a fishy taste. I love it with a little white cheese on wasa. The baconost is another toothpaste tube but it has bacon paste, a hit on Sila. The RekeOst is another tube, but shrimp flavored. The bacon and shrimp tubes disappear the fastest, even though the kaviar is my favorite.
Over the last two years, there have been many delicious cold meals. My favorites have easily been French baguettes and Norwegian breakfast or lunch. Norway has been promoted high into my mental ranks of favorite places, and not just by food. The visitors, beautiful landscape, and wildlife are the key parts of my visit to Norway. Even so, the good meals do improve its standing in my mind! –Porter
